Dried chanterelle mushrooms

The chanterelle has a taste of hazelnut and pepper. Its texture, on the other hand, is rather rubbery; it is therefore mainly eaten raw or cooked slowly in order to keep a pleasant texture. It is excellent on pizzas or in rice, soups and omelettes.
